Anantara Layan Phuket Resort is honoured to welcome Bangkok’s two Michelin-starred, celebrity Chef Chumpol Jangprai of R-Haan to showcase his Royal Thai fine dining cuisine in Phuket for a two-night pop-up event on 8 and 9 July 2022 at Dee Plee. At Dee Plee diners have come to expect a profoundly authentic Thai culinary experience.
The 2-night pop-up promises to bring elevated dining to Anantara Layan’s Beach House with an 8-course dinner and wine pairing. The menu is served samrub-style, which in Thai means a set of shared dishes, featuring chef Chumpol’s bold royal Thai cuisine interpretations. He gives a unique spin on dishes that the Thai Royal family have enjoyed through the ages.
Chef Chumpol champions Thai ingredients and Thai cooking. From caviar to duck eggs, his produce is sourced locally, and his “Sustainable Wisdom of Thai Herb Samrub” menu consisting of eight courses takes inspiration from local, traditional recipes.
The Amuse-Bouche course signifies a culinary welcome to Thailand with the Kingdom’s five different regions represented in delicious bite-sized hors d’oeuvres. Course highlights include the silky-smooth coconut cream and galangal bisque with squid ink, which is served with a crispy parmesan cheese stick, the Lobster Tom Yam Soup which has been brilliantly recreated from an ancient recipe and one of the main course dishes, Phuket style crab and wild betel leaf curry.
The menu represents the essence of Thai cuisine and the complexity that different herbs and spices bring to each dish. These herbs and spices offer other benefits as well. Ingredients such as kariyat, garlic, chili, shallots, black galangal, ginger, turmeric, pepper, and Indian gooseberry have health properties that go far beyond nutritional value.
